SALAD:

3 cups baby spinach, washed and dried (or mixed greens)
3 medium ripe pears, cored and sliced
1 cup sliced mushrooms (optional)
1 small red onion cut into thin slices and separated into rings (optional)
2 – 4 tablespoons crumbled blue cheese

¼ cup toasted walnuts

DRESSING

2 tablespoons balsamic vinegar
3 tablespoons extra virgin olive oil
3 tablespoons orange juice
Salt to taste
1 garlic clove, crushed

Directions:
Directions:
Whisk all dressing ingredients together.

Toast ¼ cup walnuts for 5 minutes at 325 degrees.

Mix salad ingredients in bowl. Toss salad with dressing and sprinkle toasted walnuts over salad while they are still warm.
