Here is the Honey-Lime Enchilada recipe.

1lb chicken cooked and shredded
6 T. Honey
4 1/2 T. Lime juice
1 T. Chili powder
10 flour tortillas (I use whole wheat)
2 10 oz. cans green chili sauce
2 cups shredded cheese

Combine first 4 ingredients in a ziplock bag or plastic container, and let marinade in the refrigerator for at least 30 mins.

Pour one can of chili sauce in 9x13 pan. Place 2-3 T of chicken mixture onto each tortilla, top with a little cheese, and roll. Place enchiladas seam-side down in the pan. Top with remaining can of chile sauce and sprinkle with remaining cheese.

Bake at 350 for 30 mins. Then broil for 2-3 mins to lightly brown the melted cheese.

I either make these the night before so that I don't end up having to let the chicken marinade for the 30 mins. Or I prepare it a few hours before dinner, and refrigerate. Then I just pre heat oven and bake until hot and bubbly. The key to this recipe.... Broiling it for the few mins at the end. They are soooo good. Soft, but a little crunchy too!!!
