Directions:1. Preheat oven to 350ºF. Butter a 1 1/2 quart baking dish with 1 tablespoon of the butter; Set aside. 2. Place the apple slices in a large mixing bowl. Add the granulated sugar, cinnamon, nutmeg, salt and apple juice. Toss to mix thoroughly, evenly coating the apples with the spices. 3. Combine the cookie crumbs and brown sugar in a small mixing bowl; stir until evenly mixed. Cut the remaining butter into 1/4 in slices, and set aside. 4. Sprinkle 1/4 cup of the crumb mixture over the bottom of the buttered baking dish. Top the crumbs with half of the apples, then drizzle with half of the apple juice in the bottom of the mixing bowl. Sprinkle one half of the remaining crumb mixture over the apples, and dot with half of the butter. 5. Add the rest of the apples and juice, then top with remaining crumbs. Dot with the remaining butter, and place in the oven until the juices are bubbly, the apples are tender and the crumbs are dark golden brown, about 50 minutes. Remove from the oven, and let cool for 10 minutes. Serve warm, topped with a scoop of vanilla or butter pecan ice cream. |
