1 can of white shoepeg corn, 1 can of black-eyed peas or field peas, 1 can of Rotel tomatoes, 3/4 c. of chopped onions, 3/4 c. bell peppers, 1/2 c. of Zesty Italian dressing, Jalapeno pepper (optional), and salt and pepper to taste.

Combine corn and peas in strainer. Drain and rinse. Pout into refrigerator ready container. Add Rotel tomatoes, bell pepper, and onions. Stir gently. Add Zesty Italian dressing as needed. Refrigerate for at least four hours. Serve with "Scoop" Corn Chips.
