"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 3/4 cups granulated sugar
1 1/4 cups light corn syrup
1 cup water
1 teaspoon flavoring oil
Food color of choice
Confectioner's sugar

Directions:
Directions:
In heavy 3-quart saucepan, combine granulated sugar, corn syrup and water. Stir over medium heat until sugar dissolves. Be sure and brush down inside of pan with water to keep down sugar crystals.

Boil without stirring, until temperature reaches 310º on candy thermometer or until drops form a hard ball in cold water.

Take pan from heat. When boiling stops, stir in flavoring oil and coloring. Pour candy in even thin strips on aluminum foil that you dusted with powdered sugar (careful, very hot yet). Let it cool.

Break candy into piece4s. Candy will keep a long time if stored in airtight jars.
