1 large tomato cored, seeded and chopped
1/4 cup pitted Kalamata olives. chopped
1 large clove garlic, minced
2 tsp. olive oil
1/4 tsp. ea: salt and pepper
4 red snapper fillets with skin left on
1 lemon sliced thin
1/4 cup flat leaf parsley, chopped

Directions:
Directions:
Heat broiler, and put rack so broiler pan is 4 inches from heat. Coat broiler pan with nonstick spray. In a small bowl, combine tomato, olives, garlic, olive oil and 1/8 tsp. of salt and pepper. Set aside.
Season fish with remaining salt and pepper. Place skin side down on prepared broiler pan. Broil for 5 minutes. Spoon tomato mixture over top of fillets and broil for an additional 3-4 minutes till tomatoes start to brown slightly. Place lemon slice on top of each fillet and broil an additional minute. Garnish with chopped parsley and serve.
