6 medium to large zucchinis, diced
4 tomatoes peeled, seeded, and diced
1 large red onion, diced
4 cloves of garlic, diced
1/2 t. thyme
1/2 t. oregano
1/2 c. olive oil
salt & pepper to taste

Directions:
Directions:
Saute' onions, garlic & bell pepper in a heavy stainless steel pot. Add zucchini and smother (with the lid on the pot, gently lifting and flipping the mixture to prevent sticking) for 30 minutes. When zucchini looks almost done, add tomatoes and other seasonings. Cook another 20 to 30 minutes.

We first searched for this recipe after seeing the Disney movie "Tattatouille" with Ian, the boys and me. It has become a family favorite.
