2 cups cold prepared brown rice
1 medium onion, sauted in 2 tbsp butter (set aside to cool)
1/4 cup chopped parsley
2 medium tomatoes, diced
1 large cucumber, diced
2 cups diced leftover beef, pork or chicken
1/2 cup plain unflavored yogurt
1/2 cup mayonnaise
1 Tbsp. lemon juice

Directions:
Directions:
Combine cold rice, cold sauted onions, diced tomatoes, diced cucumber and diced meat. Set aside.
Make dressing: Combine yogurt, mayonnaise and lemon juice until well blended. Stir the dressing into the rice mixture. Use immediately or store in fridge.
