4 pounds bone in chicken (we like a combo of breast and thighs...shut up Andy!)

Rub:
1/4 cup paprika (we like the Hungarian Hot Paprika)
1/2 teaspoon cayenne
1 Tbsp black pepper
1 Tsp ground nutmeg
1 Tsp garlic powder
1 Tbsp sugar

BBQ Sauce:
1/2 cup catsup
1/2 cup chili sauce
1/4 cup soy sauce
1/4 cup hoisin sauce
1/4 cup honey
1 Tbsp sesame oil
4-5 cloves garlic, finely chopped
1/4 cup finely chopped scallion
2 Tbsp cider vinegar
1 Tsp Worcestershire sauce

For 4 pounds, I would double the rub recipe. Combine all the ingredients and smash with the back of a spoon or grind around in a mortar and pestle to wake up the spices. At least 4 hours or up to 1 day before cooking, wash and pat dry chicken and rub the skin with the mixture. Cover or put in plastic baggies and refrigerate.

The day of the cooking, fire up the grill to medium hot and combine ingredients for the sauce. Bill heats up the sauce in a saucier, but not necessary really. If you do, watch out and don't burn the honey. Cook the chicken on the grill for 25-30 minutes. Brush with sauce and cook another 10-15 minutes turning frequently to avoid burning.

this is our favorite summer BBQ dish. The hot of the rub and sweetness of the sauce play together perfectly. So great with slaw, corn on the cob, cornbread and whatever the guests contribute. Bill likes it with Turk slaw and I make a horseradish slaw, but it is all good. (Both slaw recipes included, so you decide who is right!)
