Easy way to test for doneness:
Make a fist and feel the soft part of your hand where your thumb and your index are joined. Well done meat will feel like that part of your hand when your fist is clenched tightly (hard). Rare will feel like that part of the hand when the fist is relaxed (soft). Medium is in the middle of these two.
