3 c. diced potatoes
1 1/2 c. grated cheese
1 c. rich white sauce
1 tsp onion juice
salt and red pepper taste

White Sauce:
2 T. butter
2 T. flour
1 c. milk
1/4 tsp salt

Directions:
Directions:
Boil potatoes until just done - about 10 min. Drain. Add onion juice to white sauce. In greased 8x8 baking dish put half potatoes, salt, red pepper, half of white sauce, half of cheese. Repeat. Bake at 400 for 15 - 20 min.

White Sauce: Melt butter and blend in flour over medium heat. Gradually add milk stirring constantly until smooth and slightly thickened. Turn off unit. Cover sauce and let sit for 5 min.
