4 med. Mushrooms
1-1/2 tbsp of Mediterranean feta cheese
2 tsp fresh chopped parsley
1/2 tsp extra-virgin olive oil
1/8 tsp cayenne, or to taste

Directions:
Directions:
Preheat oven to 425º. Lightly spray baking sheet with non-stick spray. Wash mushrooms and remove stems, keeping them to the side. Mince up the stems and add them to a bowl. Add cheese, parsley, oil, and cayenne. Stir and spoon the mixture evenly into the 4 mushrooms. Bake for 12-15 minutes, or until tender..let mushrooms cool and serve. Note: These are low fat and very yummy!!!
