Layer a 8x8-inch baking pan with 4 slices of lightly toasted and buttered bread. Thick Texas Toast is nice. In a separate bowl mix 6 eggs and 1/2 cup milk, cream, or can milk. Pour over the bread - set aside

Dice and saute either 6 slices of bacon, 1/2 cup ham, or about 1/2 cup (4) patties of sausage with 1 small to medium onion, 1/4 cup green peppers and 2 tablespoons pimentos Sprinkle over egg mixture evenly and it will sink in so eggs cover this mix. You can sprinkle a little pepper over this mix or even chili powder if you like that. Bake about 30 minutes at 325* covered with foil. Then remove foil, add 1/2 to 1 cup shredded cheese such as chedder or colby/jack and let brown for another 5-10 minutes til melted and golden colored.
