2 tbsp. butter
1 tbsp. chopped fresh parsley
1/2 tsp. freshly grated lemon peel
1/2 tsp. salt
1/8 tsp ground pepper
1 1/2 lbs small red potatoes, cut in half

Directions:
Directions:
Preheat oven to 450º. Melt butter with parsley, lemon peel, salt and pepper. Remove from heat and add potatoes. Toss well to coat. Place potato mixture in center of 24" x 18" sheet of foil. Fold edges over and pinch to seal tightly. Place package in jelly-roll pan and bake until potatoes are tender, about 30 minutes.
