3 Tbsp. Dijon mustard ( I used coarse grain)
2 tsp. minced garlic
2 Tsp. Balsamic vinegar
1/2 tsp. kosher salt
1/8 tsp. freshly ground black pepper
1/2 cup extra-virgin olive oil
1/4 cup julienned basil
12 (1 1/2- inch- thick) rib lamb chops, trimmed of excess fat

Directions:

In a bowl, combine Dijon mustard, garlic, vinegar, salt, and pepper. Slowly whisk in the olive oil to form a creamy marinade. Stir in the cut basil.

Add pork chops to the marinade and toss to coat evenly, cover and refrigerate. Marinate the chops 3 to 4 hours or overnight.
Preheat grill to very hot. Shake the excess marinade from the chops and grill 3 to 4 minutes a side for medium-rare or slightly longer for more well done. Transfer to a warm plate and serve.

I like to use lamb chops with the rib bone. They are pretty and easy to pick up and eat.
Sam's club will cut and trim lamb chops for you.
This recipe is the only way I like lamb!
