3c grated zucchini
3 c sugar
1 c chopped nuts
1 1/2 c oil
4 eggs
2 tsp. cinnamon
2 tsp baking soda
1/2 tsp salt
3c flour

Directions:
Directions:
Mix zucchini, sugar, oil, and eggs;beat well. Combine dry ingredients and nuts. Add zucchini to mix. Put into greased and floured tube or cake pan. Bake at 350º for 1 hour or until tester comes out clean. Cool before removing cake, frost.

Cream Cheese Frosting
1 pkg of cream cheese
1/4c softened butter
2c sifted powdered sugar
1 tsp vanilla
If frosting is too runny add more powered sugar.
