2 cups milk
1 cup flour
1 1/2 teaspoons salt
1 teaspoon baking powder
4 tablespoons butter, divided
1 pound fresh spinach
1/4 teaspoon ground nutmeg
salt and pepper to taste
shredded Emmentaler or Swiss cheese
sour cream

Directions:
Directions:
Beat eggs and milk. Mix flour, salt and baking powder; stir into egg mixture all at once and blend until smooth. Let stand 30 minutes.

Preheat oven to 350º. Melt 1 tablespoon butter in 10x15-inch jelly roll pan. Pour in pancake batter. Bake for 20 minutes or until set (do not overcook).

Meanwhile, cook spinach in small amount of water until tender; drain thoroughly. Add remaining 3 tablespoons butter, nutmeg, salt and pepper. Spread spinach over baked pancake and roll up like a jelly roll. Slice and serve hot with shredded cheese and sour cream. Serves 6-8.
