Frozen chopped spinach
Can of diced tomatoes with Oregano, Basil and garlic

Crushed red pepper flakes
Spring onions, finely sliced
Sun dried Tomatoes in olive oil

Directions:
Directions:
Defrost spinach and drain. Using a paper towel, pat to remove all of the liquid. In a mixing bowl add spinach and diced tomatoes.

In a separate bowl mix sun dried tomatoes, spring onions and crushed red pepper flakes.

Grill mushrooms until done. Remove from grill and fill cavity with spinach mixture followed by sun dried tomatoes. Cover with cheese Monterey jack cheese and place under the broiler until cheese is melted.
