2 packages (8 ounces) cream cheese, softened
1/2 cup confectioner's sugar
2/3 cup of coconut
8 maraschino cherries, finely chopped
3/4 cup of finely chopped pecans
Directions:
Directions:
In a small bowl, beat the cream cheese and the confectioner's sugar until smooth. Beat in the coconut and cherries. Shape into a ball. Roll in the pecans. Cover and refrigerate until ready to serve it. Serve this with sliced apples, sliced fresh pineapple chunks or with graham crackers.

You can also add about 1/4 to 1/3 cup of the little tiny chocolate chips if you like.
