6 large eggs
1 cup milk
2 tablespoon granulated sugar
1 tablespoon honey
2 teaspoon pure vanilla extract
1 teaspoon each grated orange zest and ground cinnamon
1/8 teaspoon each salt and black pepper
1 (12oz) day-old loaf challah or country-style bread, cut into 8 ¾ in thick slices
1 2/3 cups sliced almonds
4 tablespoons
Unsalted butter
Confectioners’ sugar
Warm maple syrup
Fresh fruit or marmalade

Preheat oven to 200º. In bowl, whisk eggs, milk, sugar, honey, vanilla, zest, cinnamon, salt and pepper. Put 4 slices bread into egg mixture, submerging. Let soak until slices have absorbed egg mixture and are very soft, but still hold their shape; transfer to plate. Scatter both sides with half the almonds, pressing gently to adhere. In 12in nonstick skillet, heat 2 tablespoons butter over medium-low heat. Add soaked slices; cook 3 to 4 minutes per side, until golden brown. Transfer slices to baking sheet; keep warm in oven. Wipe skillet clean with paper towels. Soak remaining break in egg mixture, and press sides with almonds. Cook in 2 tablespoons butter. Dust toast with confectioners’ sugar. Serve with syrup, fruit or marmalade.
