2 cups toasted bread cubes
2 cups diced turkey (or ham or both)
1 cup butter
2/3 cup flour
4 cups half and half (or whole milk or a combination of milk and cream)
1 1/4 cup shredded parmesan cheese
1 1/4 cup shredded cheddar cheese
salt and pepper to taste
1/2 cup cooked bacon, chopped or crumbled
1/2 cup diced tomatoes
1/2 cup shredded parmesan cheese

Directions:

Scatter bread cubes in bottom of greased 2-quart baking dish. Set aside. Make the sauce: Melt butter in large pot over med heat. Whisk in the flour, salt and pepper; whisk to make a smooth, lump free paste. Cook and stir for 5 minutes or until flour begins to brown. Slowly whisk in the milk. Cook , stirring, until the mixture thickens and becomes bubbly. Remove from heat and stir in 1 1/4 cup parmesan and 1 1/4 cup cheddar . Pour the hot mixture over the bread and turkey/ham and top with 1/2 cup cooked bacon, 1/2 cup diced tomatoes and 1/2 shredded parmesan. You may use more cheese(s) if you like a lot of cheese.
