3/4 cup Olive Oil
1 t. Garlic Powder
2 t. Rosemary
1 t. Basil
1 t. Italian Seasoning
1 t. Black Pepper
1 t. Salt
1 Stick Butter, cut into slices (cold)
Brownberry Stuffing Mix (Sage and Onion)
1 c. Onion (diced)
1 c. Celery (diced)
Butter for sauteing
Chicken Broth
1 can Cream of Chicken Soup
1 Whole Turkey

Directions:
I like to roast my turkey in a roaster oven. Preheat roaster oven to 325º. Place a 1/2 inch of water in bottom of roaster. In a small bowl, mix the olive oil and spices. Set aside. Prepare Brownberry Stuffing mix according to package directions; adding 1 can Cream of Chicken Soup to hot chicken broth before mixing with stuffing cubes. You can also saute a cup of onion and a cup of celery in butter and add to stuffing mix if desired. Set aside.

Wash turkey inside and out; pat dry. Loosen the skin from the breast. This is done by slowly working your fingers between the breast and the skin. Work it loose to the end of the drumstick, being careful not to tear the skin. Using your hand, spread a generous amount of the olive oil mixture under the breast skin. Slide pieces of sliced butter under the breast skin. Stuff turkey with stuffing mixture. I like to use a stuffing bag. Cover exposed stuffing with a piece of foil and tuck edges of foil into breast cavity. I also like to stuff the neck cavity and secure skin shut with bamboo sticks. Place turkey on rack in roaster. Rub olive oil mixture all over outside of turkey. Cover and roast for several hours according to directions or until done to your liking.
