1 c. margarine, softened
1 c. sugar
1 c. confectioner's sugar
1 c. oil
2 eggs
4 1/4 c. sifted flour
1 tsp. cream of tartar
1 tsp. baking soda
1 tsp. vanilla
1 tsp. almond or lemon extract

Directions:
Directions:
Cream margarine, sugar and confectioner's sugar in mixing bowl until light and fluffy. Blend in oil and eggs. Add sifted dry ingredients; mix well. Mix in flavorings. Shape into small balls. Place on an ungreased cookie sheet, flatten with bottom of glass dipped in additional sugar. Bake at 350ºF for 12 minutes or until light brown. Cool on wire rack. Dough may be stored in refrigerator for 1 week. Yields 48 cookies.
