2 cups graham cracker crumbs
1/3 cup sugar
1/3 cup butter, melted
Filling:
12 oz. cream cheese
1 cup sugar
2 tsp. vanilla extract
3 eggs
8 oz. sour cream

Crust:
1. Combine graham cracker crumbs, sugar and melted butter.
2. Press mixture into the bottom of a spring form pan.
Filling:
1. Beat on medium speed cream cheese, sugar and vanilla for 3 minutes.
2. Turn up to high and continue to beat until light and fluffy.
3. Add whole eggs to mixture one at a time on medium speed. Mix well.
4. Fold in sour cream gently.
5. Pour mixture into pan over the crust.
6. Bake at 350 degrees for 60 to 70 minutes.
7. Turn oven off, leave door ajar and leave cheesecake in oven for one hour.
8. Take cheesecake out of oven, cool and chill in refrigerator for 4 hours.
9. Remove from pan. Slice and serve using a warm knife.
