1 1/2 cups peanut butter
1/2 cups butter (1 stick)
1 cup granulated sugar
1 cup brown sugar
3 eggs
2 tsp vanilla
4 1/2 cups quick oats
2 tsp baking soda
1 to 2 cups add-ins (mini chocolate chips, etc), options

Directions:
Directions:
1. Beat peanut butter, butter, sugars and vanilla 3 to 5 minutes.
2. Add eggs, one at a time, beat well after each addition.
3. Combine oats and baking powder and mix into peanut butter mixture.
4. Stir in add ins gradually, if using.
5. Drop on to cookie sheet using a #60 scoop. DO NOT FLATTEN COOKIES.
6. Bake in a preheated 350 degree F. oven for 12 to 15 minutes.
makes about 3 1/2 dozen cookies.
