2 Tbsp. vegetable oil
1 (2 pound) boneless center cut pork loin
salt & pepper
1 medium onion, julienned
2 carrots, thickly sliced
2 stalks celery, thickly sliced
3 cloves garlic, smashed
3 tsp. thyme (or 3 fresh sprigs)
3 tsp. rosemary (or 3 fresh sprigs)
4 Tbsp. butter
2 apples (Cortland or Rome, cored and sliced)
2 Tbsp. apple cider vinegar
1 cup apple cider
2 Tbsp. spicy brown mustard

1. Preheat oven to 400º.
2. In large oven proof skillet or Dutch oven, heat vegetable oil over medium-high heat. Season the pork loin all over with salt and pepper, then sear the meat on all sides in pan. Transfer to a separate plate and set aside.
3. Add the onion, carrots, celery, garlic and herbs and 2 Tbsp. butter to the skillet. Stir until the vegetables are browned. Stir in the sliced apples, push the mixture to the sides of pan and place pork loin in the middle.
4. Put the skillet in the oven and cook until done (140-150º internal)
5. Transfer the pork to a cutting board, cover loosely with foil and allow to rest.
6. Place apples and vegetables onto a serving platter. Return skillet to stovetop and add the vinegar, scraping the botton of the pan. Reduce by half and then add the cider and whisk in the mistard. Add remaining butter. Season to taste.
7. Slice pork and serve alongside apples and vegetables. Drizzle sauce over cut loin.
