1 (12 oz.) container standard oysters
1/4 cup celery, chopped
2 Tbsp. onion, minced
2 Tbsp. butter or margarine, melted
1 1/2 cups cracker crumbs (Ritz-like crackers)
1/2 cup milk
1 Tbsp. fresh parsley
1 tsp. lemon juice
1/2 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. black pepper
1/2 cup cheddar cheese, shredded
Additional fresh parsley

Directions:
Directions:
Pour oysters and oyster liquid into a medium saucepan; simmer 5 minutes or until edges of oysters begin to curl. Drain, reserving 2 Tbsp. liquid, set aside.
Saute celery and onion in butter until tender; add cracker crumbs, milk, 1 Tbsp. parsley, lemon juice, salt, garlic powder, and pepper, mixing well. Stir in oysters and reserved liquid. Spoon mixture into a lightly greased 1 qt. casserole dish. Bake uncovered at 375º for 15 minutes. Sprinkle cheese over top; bake an additional 5 minutes or until cheese melts. Garnish with parsley if desired.
Yield: 4 servings
