1 (10 oz.) pkg. frozen chopped spinach, thawed and pressed dry
1 (10 3/4 oz.) can cream of chicken soup, undiluted
8 oz. sour cream
1 (4 oz.) can chopped green chile peppers, drained
2 Tbsp. minced green onion
12 (4 1/2 inch) soft corn tortillas
Vegetable oil
4 cups (16 oz.) shredded Monterey Jack cheese, divided
3/4 cup minced onion

Directions:
Directions:
Combine spinach, soup, sour cream, green chile peppers, and green onions in a food processor; process until smooth.

Fry tortillas, one at a time in 1/4 inch of hot oil for 5 seconds on each side. Drain tortillas well on paper towels.

Spoon 1 Tbsp. each of cheese and onion on each tortilla; roll up tightly and place tortillas, seam side down, in a lightly greased 12" x 8" x 2" baking dish. Spoon spinach mixture over tortillas. Sprinkle remaining cheese over top. Bake at 325º, uncovered, for 30 minutes.
Yield: 6 servings
