4 eggs, separated
1/2 C sugar
1/4 tsp salt
3 C milk
1 C whipping cream
2 tsp vanilla
nutmeg

Directions:
Directions:
In a large saucepan or stock pot, beat egg yolks; gradually add 1/4 c. sugar and salt, beating constantly. Add milk and cream gradually. Cook over hot water on very low heat, stirring constantly until mixture thickens and coats metal spoon. (Note, I've just done if over low heat rather than over a water bath and it's been just fine. Gotta keep stirring it tho so it doesn't stick to the bottom of the pan!)

Beat egg whites until soft peaks form while gradually adding remaining 1/4 c. sugar. Beat chilled custard until smooth and frothy. Fold beaten egg whites into custard. Sprinkle with nutmeg.
