1/2 C. Butter
1(3 oz.) Cream Cheese
1 Egg (separated)
1 t. Vanilla
1 t. Grated Lemon Peel
1 c. Powdered Sugar
1/4 t. Salt
1 c. Flour
1 c. Chopped Walnuts
Apricot and/or Cherry Jam

Directions:
Directions:
Cream butter, cream cheese, egg yolk, vanilla, peel and salt until well blended. Mix in powdered sugar, then flour to make a stiff dough. Chill for easier handling. Shape into balls. Roll in egg whites and nuts. Place on ungreased baking sheet. Bake at 325º. Bake for 13-15 minutes. While still hot, fill with teaspoon of jam.

I like to have the walnuts very finely crushed, almost into a meal, using a food processor.
