1 1/2 c. sugar
2 tbsp. flour
pinch of salt
1/4 c. liquid shortening
1 tsp. grated lemon rind (test the lemons to make sure rind is soft enough)
1 medium lemon, peeled and sliced in paper-thin slices (remove all white skin before slicing, pour lemon juice into bowl with lemons.)
3 eggs
1/4 c. water

Directions:
Crust: combine sugar with flour and salt. Then add liquid shortening, mix well. Roll out for two pie crusts.
Filling: Blend well, 3 eggs and 1/4 cup water - add the rest of the prepared ingredients. Pour the mixture into an unbaked pie crust. The top crust should be rolled out as thin as you can get it. Brush the top crust with w/egg white or canned milk, cut slits in it, then sprinkle with sugar and cinnamon.
Bake at 400ºF for 30-35 minutes or until brown.
For best results on the crust, I always put foil around the outside edge while it is baking.

As a child growing up in Texas in the 1950’s, we always looked forward to a visit to Hugman’s Café (Boerne) to enjoy this pie. The husband and wife did not share the recipe until they closed the Café and we were blessed to be one of the regulars that received a copy of it. Now our family enjoys it at home.
