Lasagna Noodles (cooked and drained)
2 cans of Italian Style Beans (16 oz.)
½ cup chopped onion
2 cans of Creamed Corn (10 or 16 oz.)
½ cup butter or margarine
¼ cup all purpose flour
2 cups milk
1 teaspoon prepared or dry mustard
½ cup or more of crumbled blue cheese
½ cups shredded Extra Sharp Cheddar Cheese
6 hard-cooked boiled eggs, sliced
Breadcrumbs or Bread cut in ½ inch cubes (2)
2 Tablespoons Butter melted

Cook noodles, drain. Drain beans and corn in separate dish. In saucepan cook onion in the
¼ cup butter till tender. Stir in flour. Add milk and mustard. Cook and stir until thick and bubbly. Cook and stir 1 to 2 minutes more. Stir in cheeses till melted. Optional: Other cheeses can be added in sauce for a richer taste (Parmesan, cream cheese, etc.)

In a separate dish (I use Lasagna dish), place layers of: (1) lasagna in bottom of dish,
(2) Italian Beans, (3) Creamed Corn, (4) Part of cheese mixture. Repeat layers as many times as needed but save room for sliced boiled eggs on top of last layer, cheese cause, and bread crumbs on top (I pour butter over bread crumbs). Bake in 350 degree oven for about 45 to 50 minutes.

This casserole is very user friendly as you can use whatever noodles you like along with vegetables. I prefer Creamed Corn and Italian Beans with Lasagna noodles. You can substitute other vegetables and cheeses that suits your taste buds. Enjoy.
