1/2 c. butter
1/4 c. brown sugar
1 egg yolk (reserve the white- see below)
1 c. four
1/4 tsp. salt
1/2 tsp. vanilla
1/2 tsp. almond
1 slightly beaten egg white
3/4 c. nuts (optional)

Directions:
Directions:
Cream butter and sugar. Add egg, flour, salt, and extracts. Roll into balls. Dip in egg white and then in nuts. If you do no want nuts, you do not need to dip in egg white. Bake for 5 min. at 350º. Remove from oven and press down centers (I use handle end of a wooden spoon to make an indention.) Return to oven and bake 8 more minutes. Frost in the centers with powdered sugar frosting so that it looks like a nest. See powdered sugar frosting recipe in this book.
