Hawaiian Roast Pork Recipe

2 pounds of boneless pork roast with fat on it
1/2 cup of soy sauce
1 cup of pineapple juice
4 cloves of garlic, peeled and minced
1/2 large knob of fresh ginger, peeled and minced
1/2 cup of vinegar
1 - 2 tablespoons of peppercorns
onion salt
garlic salt

Directions:
Directions:
Leave the fat on the roast. Place the roast in a container along with the soy sauce, pineapple juice, garlic, ginger, vinegar, and peppercorns.
Marinate this in the refrigerator overnight or for 12 hours total. Go to the fridge occasionally and turn the roast frequently. (I put it in a plastic container and turn it upside down once in a while.)
Place the roast on rack in a shallow roasting pan and pour one cup of marinade over it.
Sprinkle the top generously with the onion and garlic salt.
Spoon any remaining peppercorns on top of the roast.
Bake at 350º for 2 hours. Then increase the oven heat to 400º for 20 - 30 more minutes to brown the top. (Des, this is so it won';t look like it needs a tan. LOL)
Slice thinly to serve. By the way, I use a baster to squirt the liquid all over the roast every so often while it is baking, and right before serving.

This is by far one of the best tasting meats I have ever made. It's absolutely mouth watering. Hint: If you don't want to buy more of the specialty items than you need - like the fresh ginger and garlic, Buehler's sells fresh recipe size servings of them over in the salad and produce section.
