1 1/2 c. flour
1 tsp. baking powder
1/2 c. unsalted butter
1 c. white sugar
5 eggs
1 1/2 tsp. vanilla, divided
2 1/2 c. whipping cream, divided
1 - 14 oz. can sweetened condensed milk
1 - 12 oz. can evaporated milk
1 tsp. rum extract
1/2 c. white sugar

Preheat oven to 350ºF. Grease and flour 9 x 13 inch baking pan.
Sift flour and baking powder together and set aside. Cream butter and 1 c. sugar together until fluffy. Add eggs and 1/2 tsp. vanilla, beat well. Add the flour mixture to butter mixture 2 tbsp. at a time. Mix until well blended. Pour batter into prepared pan. Bake for 30 min. Pierce cake several times with a fork.
Combine 1 c. whipping cream, condensed milk, evaporated milk and rum extract. Pour over the top of the cooled cake.
Whip the 1 1/2 c. whipping cream, 1/2 c. sugar and 1 tsp. vanilla until thick. Spread over the top of the cake. Be sure and keep cake refrigerated.
