1 cup butter (softened)
1/2 cup shortening
3 cups sugar
5 eggs
1-1/2 teaspoons lemon extract
1-1/2 teaspoons vanilla extract
3 cups cake flour
7 oz 7-Up®

Directions:
Directions:
Preheat oven to 300°. Spray tube pan with nonstick baking spray with flour; set aside. In a large bowl, cream butter, shortening and sugar until creamy. Add eggs, one at a time, and mix well after each. Add both extracts and blend. Add flour and 7-Up® to butter mixture in three batches, beating well after each addition and ending with 7-Up®. Pour batter in pan and bake for 1 hour or toothpick test indicates doneness. Cool and eat.

Any brand lemon-lime soda can be used for this cake. This cake is moist enough to eat without an icing, but if you must, try the lemon butter cream!
