Braised Short Ribs in Chianti Recipe

3-5 pounds short ribs
salt and fresh ground black pepper
1 bottle Chianti
6 long sprigs fresh rosemary
2 tbsp worcestershire sauce
2 tbsp extra virgin olive oil

Directions:
Directions:
Oven at 350º
1. In a cast iron skillet, heat olive oil
salt and pepper ribs on all sides and add to hot pan.
2. Sear on all sides until browned- Once browned, remove from pan and let rest.
3. Add to pan the worcestershire sauce, 3 sprigs of rosemary and one cup Chianti - this will deglaze the pan. Once boiling- reduce the heat to low and let the liquid reduce to 1/2 cup.
4. Use a large roasting pan and add meat, reduced sauce, the 3 remaining sprigs of rosemary, and the rest of the bottle of Chianti. Cover witrh Foil and place in pre-heated oven for 3-4 hours
5. After cooking time- remove foil, stir liquid and reduce oven temp to 300º, cook another 2-3 hours until meat is fork tender
6. WHen meat is done- remove to a plate. Pour remaining liquid into a measuring cup so oil and sauce will separate. Remove excess oil. once separated a tsp of cornstarch can be whisked into the liquid to thicken the sauce - Pour the sauce over the meat

Serve with Polenta and sauteed spinach w/ garlic
