8-10 lbs. country style pork ribs (thick) or pork shoulder/butt
¾ - 1 ¼ lbs brown sugar (about ½ a bag)
¼ C kosher (coarse) salt
¼ C garlic powder
1 ¼ C liquid (beer, orange juice, apple juice, or stock)
2 T liquid smoke
1 T red chili flakes

Preheat oven to 250º.
Mix all dry ingredients and rub all over pork. Refrigerate for 1 to 24 hours.
Place ribs in heavily foiled pan (enough over lapping foil to fold over the top – wrap ribs). Cover ribs with liquids. Cover up tightly and bake for 5-5 ½ hours.
Remove ribs from pan and drain liquid into sauce pan. Recover ribs. Cook liquids over medium-high heat allowing liquids to reduce into sauce. Pour sauce over ribs or leave to the side for dipping.
Variations – After cooking 4 ½ hours (before they start falling apart), remove from pan and place on grill while sauce is reducing. When sauce is complete, baste over ribs while grilling.
Served any style – preferable place ribs on toasted bun (even better with homemade coleslaw on top).
