1 - 15 oz. can pumpkin
2 c. sugar
1 c. vegetable oil
4 eggs
2 c. all purpose flour
1 tsp. ground cinnamon
1/2 tsp. salt
3 oz. cream cheese
5 tbsp. butter, softened
1 tsp. vanilla extract
1 3/4 c. confectioner's sugar
3 tsp. milk
1 c. chopped walnuts (optional)

Directions:
Directions:
In mixing bowl, beat pumpkin, 2 c. sugar and oil. Add eggs, mix well. In another bowl, combine flour, baking soda, cinnamon and salt. Add these dry ingredients to the pumpkin mixture, and beat until well blended. Pour batter into a greased 15 x 10" baking pan. Bake at 350ºF for 25-30 minutes.
For icing: beat cream cheese, butter and vanilla until smooth. Gradually add confectioners' sugar and mix well. Add mix until frosting reaches desired spreading consistency. Frost cake and sprinkle with nuts.
