Asparagus or squash works well

Directions:
Directions:
Heat oven to 450º.
Bend the asparagus near the end to break off the tough part.
Slice the squash in about 1/2" thick slices.
Spread the veggies on a sheet pan, drizzle lightly with olive oil and toss the veggies to get some on each piece. Sprinkle with salt and pepper and cook 10 - 12 minutes. Done. They aren't too soft, but are nice and tender.
