8-oz carton cottage cheese
8-oz carton Cool Whip
1 (8-oz) can crushed pineapple, well-drained
1 (3-oz) package strawberry Jell-O (dry)
chopped walnuts or pecans (optional)

Directions:
Directions:
Place cottage cheese in blender; blend until smooth. Drain the pineapple. Combine cottage cheese, pineapple, dry Jell-O, and Cool Whip in a medium sized bowl and mix thoroughly until Jell-O is dissolved. Chill before serving.
Your own favorite flavor of Jell-O can be substituted for the strawberry, and you can use low-fat cottage cheese and Cool Whip for an even lighter salad. Try different flavors with different fruit (One variation: orange Jell-O and a small can of drained mandarin oranges, chopped.
