1 gallon (glass preferably) container. I have used a water jug. At least 1 quart of full strength juie of whatever you want (berries, grapes, mangos).
5 cups sugar (this can be adjusted, I like sweet wine)
Water
Yeast (a pinch only)

I dissolve sugar in 1 quart of water, then allow to cool.
In gallon bottle, combine juice, sugar, syrup and a pinch of yeast (I use quick-rise like for bread)
Fill to within 2 inches of top with water.

Cap with a large balloon - 10 or 12 inch is best.
Secure balloon to container with heavy duty rubber band.

Place in a cool, dark place for six weeks. Check it periodically because I have had balloons leak and had to replace. CAUTION - the yeast and sugars will cause the balloon to inflate to full size. Don't put this in an area with clothes, just in case.

Once you try it, you can adjust the sugar level to what you like. The more sugar, the more alcohol content in the final product. For fresh juice, you can substitute a frozen 12 oz. container (Welches White Grape, Passionfruit, etc.) I have made a batch using frozen passionfruit and strawberry mixed to make 1 quart.
I have found it best to freeze whatever I want the juice from. Then when they thaw, I put them through a fine sieve. If you want even more, you can put them in the middle of a doubled piece of cheese-cloth and squeeze.
