1 Tsp Cooking Oil
1 Cup Chopped Deli Ham
1 Cup Slice Fresh White Mushrooms
1/2 Cup Chopped Red Pepper
1/4 Cup Chopped Green Onion
8 Eggs
1/2 Tsp Dried Oregano
Salt and Pepper, Just a pinch
1/2 Cup Grated Cheddar Cheese
1/2 Cup Chopped Tomato
1 Tbsp Chopped Green Onion

Directions:
Directions:
Heat cooking oil in large non-stick frying pan on medium. Add nest 4 ingredients. Cook for about 5 minutes, stirring occasionally, until red pepper is softened.
Whisk next 4 ingredients in medium bow. Pour over ham mixture. Reduce heat to medium-low. Cook, covered, for about 10 minutes until bottom is golden and top is set. Remove from heat.
Sprinkle with cheese. Let stand for about 1 minute until cheese is melted.
Sprinkle with tomato and second amount of green onion. Cuts into 4 wedges.
