I use a rub on the chicken. I cut them in half to make it easy. After I put the dry rub on, I double wrap in foil and bake on a rack at 300º for 1 1/2 hours. When it has cooled enough to handle, I unwrap and put it back on the rack. If you have a convection oven, put some sauce on it and roast at 400º until it looks as black as you like. EAT. If no convection oven, set oven to 450º until it looks as black as you like.
