1/2 c. shortening
1/2 c. flour
2 c. diced onion
2 c. diced green pepper
1 c. diced celery
1 medium clove garlic
1 can tomato paste
1/2 tsp. cayenne pepper
1 tsp. salt
4 c. water
1 1/2 lbs. fresh shrimp

Directions:
Directions:
Make a roux - melt shortening in heavy iron skillet, add flour all at once - cook very slowly stirring all the time until mixture becomes a very dark brown. Do not overcook. Add green pepper, celery, onions and garlic and fry five minutes. Add tomato paste, then water stirring constantly to keep from lumping and add seasonings. Turn fire as low as possible, cover and cook for 2 hours, then add shrimp. Cook 1/2 hour longer. Stir occasionally to prevent sticking. Serve over hot rice.
