20 med to large tomatoes or 40 small ones
3 green peppers
4 onions
2 sticks celery
1/2 cup sugar
1/3 cup salt
2 tsp oregano
2 tsp parsley
3 red chili peppers
3 Anaheim peppers
Any other mild peppers available ie: pablo, banana
For a medium salsa add:
2-3 Jalapenos
For a hot salsa add:
2 habanero
2 serrano

Steam tomatoes to remove the peel. Chop all other ingredients
Put everything in large pot. Bring to a boil and cook for 30 minutes, stirring frequently. Pour several cups at a time into blender and pulse until good consistency. Pour back into another large pot and stir well. Pour into sanitized pint size jars. Process 20 minutes (30 minutes high altitude)

This recipe was given to me by Scott Christensen's mom. He was my first boyfriend when moving here to the U.S. at the age of 14. We were off and on for 12 years until I was married and again for a year after I was divorced. I always said the only good thing to come of that relationship was this recipe.
