1 lb. potatoes, peeled & cupbed
2 cups water
1 small onion, chopped
3 Tbsp. butter
3 Tbsp. flour
1/2 tsp. pepper
1/2 tsp. crushed red pepper flakes
3 cups milk
1 cup shredded Cheddar cheese
1 cup chopped ham

Directions:
Directions:
1. In large pan combine potatoes & water. Bring to boil, reduce heat & simmer 10-15 minutes till tender. Drain, reserving 1 cup liquid. Set potatoes & reserved liquid aside.
2. In same pan, cook onion in butter until tender, stirring often. Stir in flour, black pepper, red pepper flakes. Cook & stir over med-low heat for 1 minute.
3. Gradually stir in milk and reserved liquid. Cook & stir over med. heat until mixture comes to a boil.
4. Stir in potatoes, cheese & ham. Cook over low heat until heated through & cheese is melted.
