Ingredients:  
6 heads of garlic -peel off all but one layer of paper, leave stem intact.
4 cups white vinegar ( I used half white and half red wine vinegar)
4 Tablespoons sugar
1 teas. whole peppercorns
4 cloves
2 small dried chili peppers ( I used a good dash of ground red pepper)
1 dried bay leaf
rind of one lemon ( use the peel only, slice off with a knife)

Directions:
Directions:
Combine all but garlic and cook 2 minutes. Add garlic and boil 4 minutes.
Remove from heat. Put into quart jar while hot with juice and cap.
Let sit out until cool. Refrigerate. Will keep 6 weeks to 2 months.
