2 c. Baked Sweet Potato mashed (no need to peel the potatoes) (or 1 c. Sweet Potato and 1 c. canned Pumpkin)
1/2 c. Oil
1/2 c. Honey or Brown Sugar
2 Eggs
2 tsp. Vanilla

1 c. Flour (easily works with GF Flour)
1.5 c. Oats (Rolled Oats)
2 tsp. Baking Powder
1 tsp. Salt
2 tsp. Cinnamon
2 tsp. Xanthan Gum (if using GF Flour)

Optional (any combination of below):
1/2 c. Raisins
3/4 c. Nuts chopped (we like Walnuts)
3/4 c. Chocolate Chips

Mix all dry ingredients together in bowl. Mix all wet ingredients together in separate bowl. Mix all ingredients together.

Spread thin (~3/4") on greased or release foiled raised sided cookie sheet (~12"X14") or 9 X 13 pans.

Bake 400º for 15-20 min. until toothpick comes out clean.

This is an awesome recipe that Aunt Karen made for Kaitlyn and Karly since they were 1 year old. They love it!! Easily doubles.
