Ingredients: 4 1/2 ounces salmon fillet Rosemary to taste Tarragon to taste Dill to taste Lemon (optional) sea salt to taste (optional) (Or may substitute a pre-mixed seafood seasoning for above seasonings) 4-6 stalks of asparagus or 1 cup zucchini chopped onion to taste 1/2 cup sliced fresh mushrooms 1-2 tsp. olive oil
1 tomato, split, sprinkled with Parmesan cheese and broiled

Directions:Tear off a good-sized piece of foil. Spread the center with a light coating of olive oil. Put the fish in the center of the foil and brush a light coat of olive oil on fish. Rub seasonings on top or use a pre-mixed seafood seasoning instead. Next, layer asparagus or zucchini, onions and mushrooms on top of the salmon. Fold foil over the fish, leaving space around the fish. Carefully turn up and seal the sides and the middle so that juices don't leak out. Bake in a 425-degree oven for 20 minutes or until veggies are tender. When done, carefully open the foil to prevent steam burns.
After removing fish from oven, turn oven to broil. Split tomato and sprinkle with parmesan cheese. Broil for a couple minutes until cheese is melted. Serve on the side. |
